棉酚(Gossypol)是一种黄色的毒性物质,主要存在于棉仁和棉根皮中。在棉籽压榨过程中,棉酚部分地溶入油中。棉酚在油中的含量随着制油工艺的优劣而不同。研究结果表明[①②],棉酚能刺激胃肠道粘膜、损害心肌、肝脏和肾脏等,而且能引起烧热病。一般认为长期食用含棉酚量高于0.03%的棉油对人的健康带来不良影响。目前农村社、队油厂加工的粗制棉油,棉酚含量一般都高于这个容许量,有的甚至高出几倍或几十倍。为了保障人民群众的健康,卫生人员需要对农村的食用棉油进行质量检查,社、队油厂也需要通过对棉酚含量测定来控制棉油制作的工艺条件,以提高棉油质量。鉴于上述原因,迫切需要建立棉油中棉酚的简易快速测定法。
