菠萝制罐废料——菠萝渣,约占果实重量的50~60%。怎样综合利用这些营养丰富的下脚?许多研究者都曾在这方面做了大量的工作,如榨取废料中的汁液来生产饮料或进行食品发酵;从废料中提取菠萝蛋白酶、维生素C和菠萝香精;用作饲料等。为了探讨菠萝渣的新用途,作者于1985年初进行了栽培凤尾菇试验。现将初步结果报告如下。 (一)材料:凤尾菇菌种引自热带作物产品加工所食用菌种厂.菠萝渣由湛江罐头厂提供,为菠萝制罐废料经榨汁后剩下的残渣,pH3.5.
