目的为更好地开展食品安全性研究和预防控制食源性疾病的发生,对衢州市部分食品进行食源性致病菌污染状况的调查,初步确定可能被污染的高危食品,为食物中毒监测提供科学依据。方法参考国家标准方法 ,采用进口CHROMagar显色培养基,对样本进行食源性致病菌的分离、生化鉴定。结果 2005-2007年共检测食品样品323份,检出致病菌67株,总检出率20.74%;其中检出金黄色葡萄球菌19株,检出率为16.24%(19/117);其次为单增李斯特菌检出27株,检出率为8.36%(27/323);沙门菌检出16株,检出率为4.95%(16/323);副溶血性弧菌检出5株,检出率12.20%(5/41);未检出EHEC O157∶H7。结论本研究显示衢州市居民主要消费食品存在食源性致病菌污染,其中水产品、生肉类食品和散装熟肉是主要污染食品品种。通过检测,为衢州市食品安全预警提供可靠数据。
Objective To better carry out food safety research and prevent and control the occurrence of food-borne diseases, investigate the contamination status of food-borne pathogenic bacteria in some foodstuffs of Quzhou city and initially identify the high-risk food possibly contaminated, Provide a scientific basis. EHEC O157:H7 was not detected. Conclusion This study shows that there are food-borne pathogens in the main consumer food products of Quzhou City. Among them, aquatic products, raw meat products and bulk cooked meat are the main contaminated food varieties. Through testing, Quzhou food safety early warning provide reliable data.
