冷海水保鲜,就是把鱼放在冷海水中进行冷冻贮藏。它作为一种鱼类的保鲜方法,早已在我国的渔业生产上推广使用。这种保鲜法具有鱼体降温快、保鲜效果好、成本低等优点。但也存在一些不良现象。其中比较突出的就是鱼体的膨胀问题。(因为冷海水保鲜法是把鱼泡在冷海水中进行冷藏的,时间长了就会被“泡肿”,即出现鱼体的膨胀)。据国内资料报道,在冷海水中藏了十五天的鱼,鱼体膨胀率为7%。国外资料提供的数据则是11%。而在我们的实验中,鱼体膨胀率却超过了20%。
Cold seawater preservation, is to put the fish in cold seawater for frozen storage. As a fresh keeping method of fish, it has been widely used in the fishery production in our country. This preservation method has the advantages of fast cooling fish, good preservation effect, low cost and the like. But there are also some undesirable phenomena. Which is more prominent is the expansion of the fish problem. (Because the cold seawater preservation method is to fish in the cold sea water for refrigeration, a long time will be “bubble swelling”, that the emergence of fish expansion). According to domestic data, fish stored for 15 days in cold seawater have a 7% expansion rate. Data provided by foreign sources is 11%. In our experiments, however, the rate of expansion of the fish exceeded 20%.
