①目的评价海产品中无机盐的营养质量,以评定群体和个体的膳食计划,寻找对人体合适的无机盐食物。②方法采用原子吸收光谱法测定钾、钠、钙、镁、铁、锰、锌、铜的含量,采用荧光分光光度法测定硒含量。③结果海产品中钾、钠、钙、镁等宏量元素含量较高,微量元素在不同海产品中含量变化很大,铁以鲍鱼含量最高,总体变化范围是0.20~22.60mg/100g;锰含量相对于其他类食物比较低,总体变化范围是0.02~1.03mg/100g,锌含量比较丰富,其中以牡蛎含量最高,总体变化范围是0.05~47.05mg/100g;铜的含量以贝壳类和甲壳类含量较高,最高的是虾蛄,总体变化范围是0.02~2.99mg/100g;硒含量变化范围为9.54~90.96μg/100g.④结论海产品中无机盐含量丰富,可作为补充无机盐的良好食物来源。
① Objective To evaluate the nutritional quality of inorganic salts in seafood to assess the diet programs of groups and individuals and to find suitable inorganic salt foods for the human body. Methods The contents of potassium, sodium, calcium, magnesium, iron, manganese, zinc and copper were determined by atomic absorption spectrometry. The content of selenium was determined by fluorescence spectrophotometry. Results The contents of macroelements such as potassium, sodium, calcium and magnesium were higher in seafood. The contents of trace elements varied greatly in different marine products. The content of iron in abalone was the highest with the overall range of 0.20 ~ 22.60mg / 100g; Manganese content relative to other types of food is relatively low, the overall range of change is 0.02 ~ 1.03mg / 100g, rich in zinc content, of which the highest content of oyster, the overall range of variation is 0.05 ~ 47.05mg / 100g The contents of copper were higher in shellfish and crustaceans than in shrimp shellfish, with the overall range of 0.02 ~ 2.99mg / 100g. The content of selenium ranged from 9.54 ~ 90.96μg / 100g. ④ Conclusion Inorganic salts rich in seafood, can be used as a good source of food to supplement inorganic salts.
