柿原产于我国,三国时已多栽培。晋西南是我国柿的主产区之一,其中以中条山区各县栽培最为广泛,品种最佳,品质优良。晋西南农谚:“走路乘阴,下地乘凉”;“蒲州柿子,邠州梨,子川的核桃没有皮”来形容当地柿子之多和优良的品质。柿子除生食外,可制成柿饼、柿酒、柿醋和柿炒面等,可给国家节省大量的粮食。柿霜可供给做糖果和医药上之用。未成熟的柿子可提取“林漆”,以作防腐剂。柿的木材细致美好,可供器材之用。不仅于此,柿对气候土质选择不苛,不善耐旱,不需经细管理适于山地栽培。为提高山区人民生活,供山区大量栽培柿子之需要,兹就调查所得,仅供参考。
