卫政法综便函[2005]35号中国制品工业协会:你协会“关于对《鲜乳卫生标准》质疑的函”(中乳协[2005]04号)文收悉。现答复如下:一、《鲜乳卫生标准》(GB19301-2003)的适用范围是指从正常饲养的健康乳牛(羊)挤取的,供乳与乳制品加工使用的乳汁,即指生鲜乳,英文名称为“rawmilk”。二、金黄色葡萄球菌、沙门氏菌、志贺氏菌等致病菌是引发食源性疾病的主要致病菌。乳汁富含营养物质,一旦被致病污染,则致病菌很容易生长繁殖,甚至产生毒素。因此,为了充分保证乳与乳制品加工过程消毒灭菌工艺的有效性,更为有效地保障消费者健康,有必要在本标准中制定病菌指标。
