通过对MAP包装、PE包装以及对照(不包装)之间蓝莓果实在袋内气体含量、失重率、可溶性固形物(TSS)、果实硬度以及细胞内与果实抗衰老有关的超氧化物歧化酶(SOD)、过氧化物酶(POD)、过氧化氢酶(CAT)、多酚氧化酶(PPO)等抗氧化酶活性的测定,综合考评了MAP包装、PE包装在蓝莓果实贮藏期间的生理变化。结果表明:MAP包装贮藏能够较好地延缓蓝莓果实的水分散失和抗氧化酶活性高峰的出现,并能够在贮藏后期也维持较高的水平,普通的PE包装贮藏在蓝莓果实的保鲜方面也能够起到一定的作用,但比MAP包装贮藏效果差。
The results showed that the contents of gas, weight loss rate, soluble solids (TSS), fruit firmness and intracellular anti-aging activity of blueberry fruit in MAP package, PE package and control (unpackaged) superoxide dismutase SOD, POD, CAT and PPO, the physiological changes of MAP package and PE package during the storage of blueberry fruits were evaluated comprehensively . The results showed that: MAP packing and storage could delay the water loss and the peak of antioxidant enzyme activity of blueberry fruit, and also maintain a high level in the latter part of storage. Normal PE packaging and storage can also be used in the preservation of blueberry fruit Play a certain role, but poor than the MAP package storage.
