美国饮食协会纽约市分会发言人科里·甘斯博士表示,豆芽中的维生素A可保持人体免疫系统健康,其中的维生素C有助于皮肤角质形成,能减少或防止皱纹出现:豆芽中所含的维生素E能保护皮肤和毛细血管,预防动脉硬化,防止老年高血压。另外,豆芽中所含的植物营养素还可以帮助人体清除致癌物质。
Dr. Cory Gance, spokesperson for the New York City Chapter of the American Dietetic Association, said vitamin A in bean sprouts helps maintain the body’s immune system, and vitamin C helps skin keratinocytes reduce or prevent the appearance of wrinkles: Vitamin E can protect the skin and capillaries, preventing arteriosclerosis and preventing senile hypertension. In addition, the bean sprouts contained in plant nutrients can also help the body clear carcinogens.
