目的通过对鹤壁市市售食品安全指标的动态检测,了解鹤壁市食品安全现状变化趋势,掌握影响食品安全的主要因素。方法采用分层随机抽样方法抽取全市辖区市售的熟肉制品、糕点及食用油等食品进行随机采样,按照国家食品卫生相关标准进行快速检测。结果食品检测项目平均合格率53.6%,其中食用油酸价合格率93.2%,过氧化值合格率90.9%;熟肉制品中亚硝酸盐合格率75.0%;茶叶重金属铅合格率70.0%;饮料甜蜜素合格率67.7%;米面制品吊白块合格率33.2%;肉丸检验硼砂合格率32.7%;木耳硫酸镁合格率32.7%;糕点溴酸钾合格率14.1%;水发食品甲醛合格率11.3%;米面制品硼砂合格率10.5%。结论鹤壁市市售食品卫生状况堪忧,合格率较低的食品有:米面制品、水发产品、糕点、肉丸、木耳,等。市场中流通的糕点、水发食品、米面制品、肉丸和木耳等食品卫生状况不佳,应加强市场监督管理,米面制品等卫生状况最差。市售食品存在一定的安全隐患,有待进一步强化食品卫生监督管理。
Objective To detect the trend of food safety in Hebi City through the dynamic detection of food safety indicators in Hebi City, and to grasp the main factors affecting food safety. Methods Stratified random sampling method was used to randomly sample the cooked meats, cakes and edible oil in the whole area of the municipality and carry out rapid testing according to the relevant national food hygiene standards. Results The average passing rate of food testing items was 53.6%, of which 93.2% of the acid value of edible oil and 90.9% of the peroxide value passed the pass rate. The pass rate of nitrite in cooked meat products was 75.0%, and the pass rate of heavy metal lead in tea was 70.0% The qualified rate of 67.7%; mian products hanging white block pass rate of 33.2%; meatballs test borax pass rate of 32.7%; fungus magnesium sulfate pass rate of 32.7%; pastry potassium bromate pass rate of 14.1%; water-fat food pass rate of 11.3% Products borax pass rate of 10.5%. Conclusion Hebi City, food market health situation is worrying, the passing rate of lower food: rice products, water products, cakes, meatballs, fungus, and so on. Market circulation of cakes, water-based food products, rice noodles, meatballs and fungus and other poor food hygiene, market supervision and management should be strengthened, rice and other health products worst case. There is a certain potential safety hazard in the commercial products, which needs to be further strengthened and supervised.
