近年来,北京地区食用菌的生产发展很快,据不完全统计,1982年上半年已产鲜菇150吨以上,约为1981年全国产量的三倍。但在市场上尚不能保证鲜菇的经常供应,其原因是多方面的。从栽培的菇种来说,以平菇为主,菌株多属中温或低温型,只适宜于低温季节栽培,需有地下室、人防工事等条件,否则,难以越夏。另外,栽培平菇多用棉子壳作原料,因北京地区很少种植棉花,棉子壳要从外地采购,长途运输既不经济,又不方便。看来在北京地区发展平菇生产,保证鲜菇周年供应,必须解决种和料方面的问题。
