(接上期)rn如前所述,糖脂是一类非常重要的非离子型生物表面活性剂,具有优良的表面性能.例如,多糖脂Emulsan的乳化性能非常好,能使原油和水的乳化液保持稳定,这对重油运输和油水乳化后作为燃料以节省能源有着重要意义.若以传统的化学方法合成糖脂,由于糖环上的羟基较多,环境相似,且酯化反应中糖环上的酰基容易发生分子内的迁移,这使得直接酯化反应的位置选择性较差,易产生大量的副产物.在这些副产物中,有些容易引起人体的过敏反应,有些甚至是致癌物.rn
