1 引 言兔肉中有特殊腥味物质存在 ,而且该腥味在加工中不易去除。其对兔肉的实用价值产生不利影响。目前国内外未见引起兔肉腥味的物质的有关报道。本研究通过对兔肉中腥味成分进行提取、收集 ,了解其在体内存在形式。经气 质联谱鉴定分析 ,初步确定了引起腥味的物质成分?
