啤酒要冰镇后饮用,最佳饮用温度在8-10℃左右。啤酒所含二氧化碳的溶解度是随温度高低而变化的。温度高,二氧化碳逸出最大,泡沫随之增加,但消失快;温度低,二氧化碳逸出量少,泡沫也随之减少。啤酒泡沫的稳定程度与酒液表面张力有关,而表而张力又与温度有关。一般情况下,温度升高,表面张力下降,泡沫持久性降低。因此,啤酒的饮用温度很重要,适宜的温度可以使啤酒的各种成分协调平衡,给人一种最佳的口感。冬季饮用啤酒时不必冰镇,如需热饮,可将酒瓶放入30℃左右的水中浴热,然后取出摇匀即可。
