虾酱是一种含丰富旦白质及其它营养成份的发酵食品,是良好的配餐佐料,鉴于我国目前还没有虾酱卫生标准,因此开展对虾酱卫生质量的调查,为制订虾酱卫生质量标准提供依据。于今年6月对中山、台山二县生产的虾酱进行卫生学调查及有关测定,检测样品31份,测定pH值、水份、食盐、总酸、氨基氮、挥发性盐基氮、铅、砷、汞、细菌总数、大肠菌群及致病菌。
