梅,古写作“(木某)”、“(朵朵)”,为蔷薇科落叶乔木。叶阔卵形或卵形,有细锐锯齿,叶柄顶端有二腺体。花单生或两朵齐出,先叶开放,多为白色和淡红色,有清香。核果球形,未熟时为青色,成熟时一般呈黄色,味极酸。加工用的梅果均为未成熟前采收。依采时果色不同可分为白梅(青白色)、青梅(绿色)、花梅(带红色)等类型。梅原产我国,分布在长江以南各省,喜温暖湿润,对土壤的适应性很强。夏季采收其果实,除少量供生食外,大部分被制成蜜饯和果酱,品种繁多。
