目的观察不同食物对地方性砷中毒病区饮用水砷浓度的影响。方法取菠菜、胡萝卜、瘦猪肉、豆腐、大米、玉米各1、2.5、5、10 g,牛奶5、10、20、30 ml,分别和50 ml病区水混合加热至沸腾,取上清用超低温捕集-氢化物发生-原子吸收分光光度计检测砷浓度。结果加入不同质量菠菜的4组,水砷浓度显著降低(P<0.05);2.5、5 g豆腐组和1、2.5 g瘦猪肉组,水砷浓度显著升高(P<0.05);大米和玉米各组水砷浓度显著升高(P<0.05)。结论菠菜可能存在降低水砷浓度的作用,瘦猪肉、豆腐、大米、玉米可能使水砷浓度升高。
Objective To observe the effect of different foods on arsenic concentration in drinking water of endemic arsenism area. Methods Take spinach, carrot, lean pork, tofu, rice, corn each 1, 2.5, 5, 10 g, milk 5,10,20,30 ml, respectively, and 50 ml of ward water mixed heated to boiling, Determination of Arsenic Concentration by Cryogenic Capture - Hydride Generation - Atomic Absorption Spectrophotometer. Results The concentrations of arsenic in water were significantly decreased (P <0.05) in four groups with different mass of spinach. The concentrations of arsenic in the two groups were significantly increased (P <0.05) Arsenic concentrations in each group were significantly increased (P <0.05). Conclusion Spinach may reduce the concentration of arsenic in water. Lean pork, tofu, rice and corn may increase the concentration of arsenic in water.
