经口生物利用率是描述物质在胃肠道内释放、吸收、代谢、最终到达循环系统的过程,是外暴露剂量中对机体产生作用的物质比例。基于生理条件模拟人类胃肠道消化、吸收、转运等过程的体外消化模型是目前研究食品中污染物生物利用率的有用工具。食物基质成分及脂肪含量、污染物理化性质、食物中其他营养素含量和机体营养状态等影响物质的生物利用率。本文阐述生物利用率在食品污染物风险评估中的应用。
Oral bioavailability describes the process by which substances are released, absorbed, metabolized and eventually reach the circulatory system in the gastrointestinal tract, which is the ratio of substances that exert an action on the body at the external exposure dose. In vitro digestion models that simulate the processes of human gastrointestinal tract digestion, absorption, transport and the like based on physiological conditions are currently useful tools for studying the bioavailability of contaminants in foods. Substance composition and fat content of food, physical and chemical properties of pollutants, other nutrients in food and body nutrition status affect the bioavailability of substances. This article describes the application of bioavailability in food contaminants risk assessment.
