苯并(a)芘[Benzo(a)Pyrene],简称 BaP]是目前世界公认的特强致癌物质。据有关资料介绍,它已广泛地污染了大气、土壤、水质、食品等,形成了对人体健康的潜在威胁。食品中 BaP 除来源于环境污染外,不合理的工艺加工如烟熏、烘烤、煎炸、烧焦等过程中也可产生并使食品受到污染。为了解我县主要食品中 BaP污染情况,以便对制订食品中 BaP 的卫生标准和寻求理想的加工方法提供科学依据,减少 BaP 对食品的污染,严防“癌从口入”,以保障人民的身体健康。我们于1980年8月和1982年4至8月对兴国县主要食品及其加工工艺方法进行了调查分析。
Benzo (a) Pyrene], referred to as BaP] is the world’s recognized super-strong carcinogen. According to relevant information, it has extensively contaminated the atmosphere, soil, water quality, foodstuffs and the like, posing a potential threat to human health. In addition to BaP food from environmental pollution, the unreasonable process of processing such as smoking, baking, frying, burning and other processes can also produce and make the food contaminated. In order to understand the BaP pollution in the main foodstuffs of our county, in order to provide a scientific basis for formulating the BaP health standards in foodstuffs and to find the ideal processing method, to reduce the pollution of BaP to foodstuffs and to prevent “cancers from the mouth” to protect the people’s body health. In August 1980 and April to August 1982, we conducted a survey and analysis of the main foods and their processing techniques in Xingguo County.
