菠菜,又名波斯菜、角菜、赤根菜、鼠根菜、鹦鹉菜等,属藜科草本植物。原产波斯,唐代贞观年间由尼泊尔传入我国,至今已有1300多年的历史,各地均有种植,是冬春低温季节时的绿叶蔬菜。每当大地回春,万物复苏的时节,越过寒冬的菠菜便以它那鲜艳的翠绿率先为人们带来春的信息。北宋大文学家苏东坡曾赞誉它说:“北方苦寒今未已,雪底菠精如铁甲。”
