对815名购销保健食品人员进行知识─态度─行为(K-A-P)的问卷调查结果表明:人们的营养及保健食品知识水平(简称知识水平)与文化程度呈正相关(r=0.96,P<0.01),人们对保健食品的态度是积极或较积极的,74.9%的人选用保健食品时主要考虑功能。但家庭主妇、个体经营者、工人知识水平较低,销售与购买保健食品人员的知识水平无显著性差异(t=1.39,P>0.05),上述人群应为营养教育的重点对象,被调查者中有10%~50%的人不能正确选择含各种营养素的食品,44.5%的人认为保健食品是食品,更有少数人认为应按医生处方食用保健食品,食用保健食品的目的是治疗疾病。提示应尽快明确保健食品概念、普及营养及保健知识,澄清人们的认识,营养教育以选择电视、广播、报纸和杂志等形式为主。
