青蒜不仅食味鲜美、营养丰富,且生育期短、栽培简便。早秋优化栽培青蒜,可堵缺,填补秋季蔬菜淡季,增添秋菜花色品种。1992年秋,江苏省射阳县示范种植,亩均产值3000元以上,高产田可逾4000元,经济效益极为显著。其栽培要点:(一)选用早熟品种一般生产上常用的大蒜品种均可作为青蒜栽培,但以发芽快的紫皮蒜为好。故应选用叶、薹兼用早熟品种“二水早”、“三月黄”等,这些品种不仅苗期耐寒,生长速度快,且上市早、产量高、口味佳,在冬季低温条件下,生长速度明显优于其它品种。(二)种蒜播前处理大蒜为耐寒性较强的蔬菜,播前经30天
