发酵剂对发酵乳的品质的影响是极其重要的。发酵乳技术重大突破之一,就在于改变了传统液态发酵剂生产模式,冷冻、浓缩、干燥发酵剂在发酵乳生产中的应用。本文就直投式菌种的应用情况进行简要介绍。
The effect of starter on the quality of fermented milk is extremely important. One of the major breakthroughs in the technology of fermented milk is to change the application of the traditional mode of production of liquid starter, frozen, concentrated and dry starter in the production of fermented milk. In this paper, the application of direct injection of bacteria are briefly introduced.
