对秋子梨、白梨、砂梨、西洋梨和新疆梨5个种内281个品种的果实可溶性糖及可滴定酸含量进行分析发现,秋子梨品种含糖量高,含酸量中等;西洋梨、新疆梨、白梨和砂梨的品种含糖量中等;新疆梨品种含酸量中等,余者合酸量低。秋子梨中的红八里香、平梨、面梨、山梨16、南果4号、伏五香、早蜜、南果梨;白梨中的水罐;西洋梨中的赛斯凯尔和波16含糖量极高,均>11.00%。同时探讨了糖酸比与果实风味的关系,比值<15.0者,果实风味多为甜酸或酸涩,品质低下;比值在15.1—25.0者,风味多甜酸,品质中到中上;比值为25.1—60.0者,风味多酸甜,品质中上到上;比值>60.1者,风味多为淡甜、甜或甘甜,品质中上至上。
