以栉孔扇贝和海湾扇贝为研究对象,采用Folch法提取两种扇贝肌肉和内脏中的总脂,并对其脂质和脂肪酸组成进行分析。结果表明:两种扇贝的肌肉总脂含量显著低于内脏,且肌肉总脂以磷脂为主,而内脏总脂以甘油三酯为主。两种扇贝的脂肪酸组成特征为多不饱和脂肪酸(PUFA)>饱和脂肪酸(SFA)>单不饱和脂肪酸(MUFA),其中,PUFA以n-3系列为主,主要为C20∶5n-3(16.58%~19.00%)和C22∶6n-3(11.49%~21.18%);肌肉中的n-3/n-6比值高于内脏,尤其C22∶6n-3含量显著高于内脏(P<0.01)。同时从两种扇贝中鉴定出6种脂肪醛二甲基缩醛(DMA),总量在7.77%~11.20%,并以C18∶0DMA(3.05%~6.89%)和C20∶1DMA(1.55%~4.25%)为主,且肌肉中DMA含量高于内脏,表明两种扇贝总脂中含有丰富的缩醛磷脂,肌肉总脂中的缩醛磷脂百分含量高于内脏。
Taking Chlamys farreri and Gulf scallop as research objects, Folch method was used to extract the total lipids in muscle and viscera, and their lipid and fatty acid composition were analyzed. The results showed that the total lipid content of the two scallops was significantly lower than that of the viscera, and the total fat of the two scallops was mainly phospholipid, while the total fat of the viscera was mainly triglyceride. The fatty acid composition characteristics of the two scallops were as follows: polyunsaturated fatty acids (PUFA)> saturated fatty acids (SFA)> monounsaturated fatty acids (MUFA), of which PUFA was mainly n-3 series and mainly consisted of C20: 5n- The ratio of n-3 / n-6 in muscle was significantly higher than viscera, especially C22: 6n-3 was significantly higher than visceral (P <0.01) . At the same time, six kinds of fatty aldehyde dimethyl acetals (DMA) were identified from the two kinds of scallops, the total amount was from 7.77% to 11.20%. C18: 0DMA (3.05% -6.89%) and C20:1DMA 4.25%), and the content of DMA in muscle was higher than that of viscera, which indicated that the total lipid in both scallops was rich in plasmalogen, and the percentage of plasmalogen in total muscle was higher than that in viscera.
