近年来,随着我国餐饮业的迅速发展,餐饮市场的竞争力加剧,餐饮企业对烹饪人才提出了新的要求与挑战,不仅需要具备专业的技术能力,还要具有创新精神,唯有这样,才能使毕业生适应社会竞争,满足社会及企业对人才的需求,从而培养出一大批优秀的社会主义事业接班人与建设者。但从我国的烹饪教学现状看,教师的教学方式及教学手段都存在一定问题,制约烹饪教学效果的强化,而项目教学法的出现及时地弥补了教师教学方式的不足,促进了学生创新精神与实践能力的培养。
