不同生产工艺对焦糖理化性质影响的研究

本文采用非氨法、氨法、味精催化法等生产工艺进行生产焦糖色素试验,并分别对其色率、起泡性、等电点、胶体特性、耐酸性等理化性能进行了测定。通过对试验结果的分析和讨论,得出了一些有益的结论,对焦糖色素的生产和应用有一定的指导作用。
