目的了解吐哈油田餐饮具卫生状况及消毒卫生质量,探讨其影响因素,提出改进建议。方法大肠菌群快速纸片法,采样及检验按GB14934-94《食品卫生国家标准汇编》规定操作,进行检验。结果总体合格率61.60%,总体上看合格率呈逐年上升趋势,大型餐馆合格率较高,中小型餐馆合格率较低。不同类型餐饮业单位,不同类型餐具的合格率差异均有统计学意义。结论应加强餐饮业餐具消毒监管力度,采取综合措施进一步提高餐饮具消毒卫生质量。
Objective To understand the sanitary status of tableware in Tuha Oilfield and the quality of disinfection and hygiene, discuss the influencing factors and propose suggestions for improvement. Methods Coliform bacteria fast paper method, sampling and testing according to GB14934-94 “national standards for food hygiene,” the provisions of the operation, testing. The overall pass rate of the results was 61.60%. Generally speaking, the passing rate showed an upward trend year by year. The passing rate of large restaurants was high, and the passing rate of small and medium-sized restaurants was low. Different types of catering industry units, different types of tableware pass rate differences were statistically significant. Conclusion We should strengthen supervision on tableware disinfection in catering industry and adopt comprehensive measures to further improve the quality of tableware disinfection and hygiene.
