某些亚硝胺类化合物,具有很强的致癌作用。近几年应用口服亚硝胺制剂,成功的诱发动物胃癌。1971年世界卫生组织指出“最近对体内形成亚硝胺的可能性引起了关切。亚硝胺可以由摄入胃里的硝酸盐及食品中的仲胺或叔胺之间反应产生,其中亚硝酸盐也可由肠道细菌作用于摄入胃内的硝酸盐而产生。1976年有作者报导,在哥伦比亚胃癌高发区居民从饮水中摄入硝酸盐含量比低发区高。Hanszel 等1976年报导在日本饮用低硝酸盐自来水的居民患胃癌的危险性比饮用含量高的硝酸盐井水为低。上述资料表明胃癌的发生与发展和饮水中硝酸盐的含量有一定关
