目的了解石家庄市市售果脯中铝的含量。方法在部分超市、批发市场随机抽取果脯样品,用电感耦合等离子体质谱法测定铝含量。结果从超市采集的果脯铝含量在0.21~9.25 mg/kg之间;批发市场采集的果脯铝含量在3.10~851.00mg/kg之间,有近50%的果脯铝含量在60.00~851.00 mg/kg之间。结论部分果脯的铝含量很高,是由于在加工过程中加入了含铝膨松剂的缘故。建议尽快制定果脯蜜饯食品铝含量的国家标准,规范果脯的加工过程。
Objective To understand the content of aluminum in the market of Shijiazhuang city. Methods Preserved fruits samples were randomly selected from some supermarkets and wholesale markets and the content of aluminum was determined by inductively coupled plasma mass spectrometry. Results The contents of aluminum in the preserved fruits collected from supermarkets ranged from 0.21 to 9.25 mg / kg. The contents of preserved aluminum in the wholesale markets ranged from 3.10 to 851.00 mg / kg. Almost 50% of the preserved aluminum content ranged from 60.00 to 851.00 mg / kg between. Conclusion The high content of aluminum in some preserved fruits is due to the addition of aluminum-containing leavening agents during the processing. Proposed as soon as possible to develop national standards of preservative food aluminum content, regulate the processing of preserved fruits.
