杂交高粱产量高、抗病性和抗逆性强,在北方已经普遍推广种植,我省泸县、古蔺和西昌等地近年来也已开始推广种植。由于杂交高粱籽粒化学成份与四川糯高粱籽粒不同,所以酿酒工艺必须作适当调整,才能达到较为满意的酿酒效果。为此,我所与泸州曲酒厂联合开展了杂交高梁籽粒酿酒品质特性及其配套工艺的研究,以便解决杂交高粱酿酒存在的主要问题,进一步促进我省推广杂交高粱种植。现将主要研究结果简报于后:
