重口味的葡国菜与清而不淡的广东菜,融合成特有的葡式澳门菜。而非常忠诚的澳门人,也忠实地代代流传广东人食补养生观念与细腻烹调手法,不论餐厅大菜与小店点心,都丰富了澳门的饮食文化,也满足游客期待的心与挑剔的嘴。 葡式澳门菜,既不非常“葡”,也不非常“中”,而是糅合葡萄牙菜概念、中国厨艺,再添加非洲、东南亚香料。要吃如此有国际血统的菜,只有到澳门来,以下介绍两道不可不尝的菜:非洲鸡与马介休球。 在澳门吃非洲鸡,听来怪怪,但却是各个葡国餐厅认为最具代表性的佳肴。当地人说,非洲鸡是由葡萄牙人从非洲莫桑比克传过来的,当时的非洲奴隶以土法烤鸡,外表焦黑但香味四溢,肉嫩汁多,葡萄牙人非常喜爱。
