2008年,我国国有及规模以上肉类屠宰及肉类加工企业达到3096家,其中畜禽屠宰加工为1799家、肉制品加工1297家;另有肉类罐头制造企业88家。2008年,全国国有及规模以上肉类屠宰及肉类加工企业销售总收入达到4242.3亿元,其中畜禽屠宰加工销售收入为2423.4亿元,肉制品及副产品加工销售收入为1818.9亿元(肉类罐头制造销售收入为55.7亿元),与2007年相比均有大幅提高。这些数据表明,近年来我国肉类总产量快速增长,肉类品种越来越多;另外,近年来肉类加工行业的组织化、产业化、区域化发展及科技水平也不断提升,肉类加工的机械化、品牌化有了很大提升,肉类龙头企业及规模以上企业的市场份额不断扩大。纵观肉类加工行业的发展,与肉类加工技术、包装技术、添加剂以及管理水平和新技术的应用有着密切关系。肉类加工行业的发展,极大的带动了这些相关领域的提升;而这些领域的新技术、新工艺的不断涌现,也促进了肉类加工产业的健康发展,对肉类加工产业起到了支撑作用。
