目的为保障高校学生饮食安全,防止餐具不卫生引起的食源性疾病。方法 2007—2009年每年对镇江市3所高校及其周边餐饮单位随机抽取24家,共计抽检576件餐具、48份餐具洗涤剂分别检测餐具消毒效果、洗涤剂卫生质量。结果 烷基苯磺酸钠(ABS)残留率、大肠菌群合格率、餐具总体合格率分别为83.33%、78.47%、79.69%,均为高校餐厅>小型餐馆>流动饮食摊点,P<0.01;后2个合格率呈年度递增趋势,P<0.01;洗涤剂合格率为58.33%,不合格原因是菌落总数超标。结论镇江市“高校区域”的餐饮卫生监管重点是小餐馆和流动饮食摊点。
The purpose is to protect the safety of college students’ diet and prevent the food-borne diseases caused by unsanitary utensils. Methods From 2007 to 2009, 24 schools were randomly selected from 3 colleges and universities and their surrounding catering units in Zhenjiang City. A total of 576 tableware and 48 tableware detergents were tested randomly for tableware disinfection and detergents hygiene quality. Results The residual rate of sodium alkylbenzene sulfonate (ABS), the rate of coliform bacteria and the overall pass rate of tableware were 83.33%, 78.47% and 79.69%, respectively, all of which were in restaurants> small restaurants> mobile diet stalls, P <0.01; After 2 pass rate showed an annual increasing trend, P <0.01; detergent pass rate was 58.33%, the reason for the failure is the total number of colonies exceeded. Conclusion Zhenjiang City, “colleges and universities” catering health supervision is focused on small restaurants and mobile food stalls.
