本刊1995年第10期发表了技文的《怎样识别优劣生猪肉》一文后,一些读者来信谈了感想,对不法分子坑害消费者的恶劣作法,表示了极大的不满,反响强烈。吉林省某动物检疫站的王全红、张大庆同志从事市场南禽肉的检疫工作,对注水肉的危害和鉴别方法进行了3年多的追踪调查,颇有所得。为使消费者对注水肉有一个较为完整的认识和鉴别方法,这两位热心读者特此写了这篇文章,以进一步提高消费者的鉴别能力。
After the publication of the article entitled “How to Identify the Good and Disedible Pork,” which was published in the 10th issue of the journal in 1995, some of the readers wrote letters about their feelings and expressed their great dissatisfaction and strong repercussions about the bad practices that criminals have harmed consumers. Wang Quanhong and Zhang Daqing, an animal quarantine station in Jilin Province, engaged in the quarantine work of the south poultry market. They conducted a follow-up investigation of the harm and identification methods of water flesh for more than three years and got quite a lot of income. In order to make consumers have a more complete understanding of water injection and identification methods, the two enthusiastic readers hereby wrote this article to further enhance the consumer’s ability to identify.
