拱式菜窖的构造如同拱式营房,所不同者是墙壁建筑在地下。即在预定地点按预计大小挖一长方形的坑,四周用石头、水泥(或石灰)建筑窖壁,顶部用砖砌成弓形,上面复盖土层(约100厘米厚),并留有四个22.5平方厘米的通气孔,在窖的一端或一侧中间留门。这种菜窖的主要特点是坚固耐久,进出方便,免去了每年挖临时菜窖的麻烦,而且节省人力、物力,貯藏的蔬菜质量好。因此,
