目的掌握餐饮单位的卫生状况,控制食源性疾病的发生。方法 2010—2012年对南安市650家餐饮单位消毒餐具按GB 14934-1994(纸片法)进行检测。结果 2010—2012年南安市餐饮单位餐具消毒总合格率69.1%,以中小学食堂合格率最高(90.8%),中小型餐饮单位最低(45.2%);3个年度监测合格率呈下降趋势,2010年合格率最高(75.1%),其次为2011年74.8%,2012年最低(57.8%);2012年的中小学食堂合格率(83.3%)和托幼机构食堂合格率(68.5%)均低于前两年。结论餐饮单位餐具消毒合格率亟需提高,应加强消毒卫生知识和技能培训,加强监管力度。
Objective To understand the health status of catering units and to control the occurrence of foodborne diseases. Methods From 2010 to 2012, 650 catering units in Nanan were disinfected according to GB 14934-1994 (paper method). Results The total qualified rate of tableware disinfection of catering units in Nan’an from 2010 to 2012 was 69.1%. The qualified rate of primary and secondary school canteens was the highest (90.8%) and the lowest (45.2%) for small and medium-sized catering units. The passing rate of three annual monitoring showed a decreasing trend. 2010 Followed by 74.8% in 2011 and the lowest in 2012 (57.8%). The passing rate of primary and middle school canteens in 2012 (83.3%) and that of nurseries and canteens (68.5%) were both lower than Two years ago. Conclusion Tableware disinfection catering units urgently need to improve the pass rate should be strengthened disinfection of health knowledge and skills training to strengthen supervision.
