目的:识别并评估2010年上海世博会食品安全风险,为世博食品安全保障提供技术支持。方法:通过回顾性研究和专家访谈评分,结合世博会特点识别食品安全风险,采用矩阵法对食品安全风险进行评估和分级。结果:上海世博会期间存在的食品安全风险包括急性食物中毒,食物过敏、蓄意食品污染及投毒、食品投诉及借用“食品安全”概念的媒体炒作。其中,细菌性食物中毒、人为投毒的风险水平较高。结论:政府有关部门应把预防控制细菌性食物中毒、人为投毒做为优先管理的重点,有效预防、规避和消除已识别的食品安全风险,实现世博会期间园区不发生重大食品安全事件,全市食品安全总体可控“的总体目标。
Objectives: Identify and assess the food safety risks for the 2010 Shanghai World Expo to provide technical support for Expo food safety and security. Methods: Through the retrospective research and expert interviews score, combined with the characteristics of the World Expo to identify food safety risks, the matrix method to assess and rank food safety risks.
