首次对三种不同炮制品蛋黄油所含磷脂成分进行分析。采用单向薄层层折、Dittmer试剂显色,检出6种磷脂组分,以薄层扫描──吸收度比色系数校正法对各磷脂组分进行了快速定量分析。结果显示总磷脂含量(mg/g)CHCl3提取法254.50,烘法15.25,传统法10.89。其中LPC,SM两组分除CHCl3提取法少量检出外,其余二法均未检出。3种样品中PE,PA,Pl含量依次为烘法>传统法>CHCl3提取法。
For the first time, the phospholipids contained in egg butter of three different processed products were analyzed. Using unidirectional thin layer folds and Dittmer reagents for coloration, six phospholipid components were detected and the phospholipid fractions were rapidly and quantitatively analyzed by thin layer scan-adjustment of colorimetric coefficient of absorbance. The results showed total phospholipid content (mg/g) CHCl3 extraction 254.50, baking 15.25, traditional 10.89. Among them, LPC and SM two components were not detected except that a small amount of CHCl3 extraction method was detected. The contents of PE, PA, and Pl in the three samples were in the following order: baking method> traditional method> CHCl3 extraction method.
