“秋风响,蟹脚痒”、“菊花黄,螃蟹肥”。又是美啖螃蟹的时节了。蟹,俗称螃蟹。种类众多,有大石蟹、河蟹、海蟹、湖蟹等。全世界蟹类约有4500余种,我国约近800种,踪迹遍及大江南北的江河湖泊。江苏阳澄湖的清水大闸蟹、南京长江的蟹、河北赵北口和胜芳的河蟹都是驰名中外的珍品。原产我国的中华绒螯蟹,二十世纪初,随德国远东轮船,从上海吴淞口被带到汉堡港,从此‘侨’居欧洲,在那里生儿育女。蟹,人馔历史悠久。据《汲冢周书》载:周成王时,海阳并献蟹入贡。那时宫廷已将蟹列为御膳了,《周礼》即记载有‘蟹胥(酱)’。北魏贾思勰的《齐民要术》收有‘蟹藏法’宋代《中馈录》有吃生蟹的记录。元倪瓒著《云桂堂饮食制度集》载有蟹的烹制方法。明代有了“玛瑙蟹”,清代出现了“蟹黄兜色”、“螃蟹羔”等蟹肴。然而,我国历
