根据流行病学的研究表明,食用油量和油的种类与冠心病的发病率呈正相关关系。因此,食用油的食用禁忌有:(1)防止摄入的饮食中脂肪含量过高。脂肪会通过极低密度脂蛋白的浓度使血浆总胆固醇的浓度升高,从而使低密度脂蛋白的胆固醇升高。饮食的脂肪过量还与有些自发的或外界因素诱发的癌症的发病率有联系。有的研究证明:饮食脂肪是乳腺癌和结肠癌等的加速剂和诱发剂。所以,当今营养学界推荐:“饮食组成中应将脂肪的摄入量减少到总能量的30%以下。”
