厨房是我国民居的重要组成部分,家庭“主厨”的很多活动是在厨房内进行的。这就要求厨房不仅具有一定的面积、良好的采光通风,而且要功能齐全,布局合理,整洁卫生,为炊事人员创造一个方便舒适的备餐环境。最近笔者赴美探亲,住在某大学学生家庭宿舍。该宿舍俗称“二室一厅”,使用面积共计58m~2,其中卧室、起居室及卫生间合计约51m~2,厨房只用6.7m~2,而且又是入户通道(图1)。但是由于能够充分合理地利用空间,却设有四火电炉、电烤箱、电冰箱、微波炉、热水器、暖气片、洗涤池及总容积达2.3m~3的十多个贮物
The kitchen is an important part of our national residence. Many activities of the family “head chef” are carried out in the kitchen. This requires that the kitchen not only has a certain area, good lighting and ventilation, but also has complete functions, reasonable layout, cleanliness and hygiene, and creates a convenient and comfortable preparation environment for cooking personnel. Recently, the author went to the United States to visit relatives and lived in a university student family dormitory. The dormitory is commonly known as “two rooms and one living room” and the total area of use is 58m~2, of which the bedroom, living room, and bathroom are approximately 51m~2, the kitchen is only 6.7m~2, and it is also a household entrance (Figure 1). However, due to the full and reasonable use of space, there are four fire pits, electric ovens, refrigerators, microwave ovens, water heaters, radiators, sinks and more than a dozen storages with a total capacity of 2.3m~3.
