姜为姜科植物多年生的地下根状茎;秋初采收为生姜,多为鲜用;秋末采收,称之老姜,多为干用,故称之干姜。生姜质脆嫩,干姜质老。根据姜的加工炮制不同,一般可分为:鲜姜、煨姜、姜皮、干姜、炮姜。1鲜生姜具有发表散寒,除鱼蟹之毒之功常与苏叶同用。与半夏同用,具有燥湿止呕作用。与茯苓、杏仁、陈皮同用,可增强止咳化痰之能。生姜与大枣同用,具有调和营卫,益脾养胃之用。
