长瓜实际是葫芦的一个变种,其名称颇多,也称夜开花、瓠瓜、扁蒲、瓠子等。莲花香肉羹原料:长瓜2条(约1000克),鲜猪五花肉300克,黄酒30克,精盐、葱花、味精各适量。制法:1、将瓜洗净,切成4~5厘米长的段(约20~30段),用尖刀挖去三分之一内瓤,成为厚壁杯臼状待用。2、加工鲜肉,将猪肉放在砧板上,用菜刀斩成茸,放碗内,用黄酒、精盐、葱花、味精拌均匀,逐一瓤在瓜杯内,放在深盘内。3、取蒸锅,把瓤肉瓜杯放入蒸25分钟即成。特点:形似莲蓬,集鲜软滑脆于一体。
