芦笋,又名石刁柏、龙须菜。春季地下茎萌发新芽,其嫩茎经过人工培土软化后为食用芦笋。芦笋不仅是一种名贵蔬菜,同时对心脏病、高血压、糖尿病等症均有一定疗效。目前我国一些省、区已大面积栽培了芦笋,用芦笋制作的罐头畅销国内外,颇受消费者青睐。现将芦笋罐头制作工艺介绍如下: 一、原料采集 每年分春秋两季采笋。加工罐头宜选用白尖笋(绿尖笋作蔬菜鲜销)。每次采收应在上午9时前进行,做到轻采轻装,及时运回,应避免堆压重摔,形成碎笋。所采笋茎长为10~16厘米,横径1~3.5厘米。从采收到加工间隔时间一般不超过7小时。 Asparagus, also known as asparagus, asparagus.
