著有《茶经》的唐代文学家陆羽,在品评茶盏时用:“碗……越窑上、鼎州次、婺州次、岳州次、寿州次、洪州次。越州瓷、岳州瓷皆青,青则益茶,茶色白红之色,邢州瓷白而茶色丹;寿州瓷黄,茶色紫;洪州瓷褐,茶色黑,悉不宜茶。”自此,有了文献记载洪州窑青瓷位居六大名窑,却位列最末一位,这是当时人们从饮茶的喜好与之其他诸窑比较釉色与茶色而定,却使洪州窑多了些黯淡的色彩,让洪州窑在世人面前遮上了一层神秘的面纱。
