目的了解南通市通州区建筑工地食堂卫生状况,为制订相应的管理对策提供指导依据。方法按照《中华人民共和国食品卫生法》、《餐饮业食品卫生管理办法》,对通州区32个建筑工地的45家食堂的卫生许可证、从业人员健康证明、加工场所卫生条件等进行调查。结果 45家食堂卫生许可证持有率24.44%;健康证明持有率33.10%;“三防”设施齐全的12家(26.67%);厨房面积大于8m2并有冷藏设施的14家(31.11%);有专用餐用具清洗水池的21家(46.67%);有独立的备餐间的22家(48.89%);有专用蔬菜肉类清洗水池的27家(60.00%);有工人洗手池的35家(77.78%);使用符合要求的自来水的40家(88.89%)。结论通州区建筑工地食堂卫生状况较差,存在安全隐患。
Objective To understand the health status of canteen in Tongzhou District, Nantong City, and to provide guidance for formulating corresponding management countermeasures. Methods According to the “Food Hygiene Law of the People’s Republic of China” and the “Food Hygiene Management Measures in Catering Industry”, the health permits of 45 canteens in 32 construction sites in Tongzhou District, the health certificates of employees and the hygiene conditions of processing sites were investigated. The results showed that 45 canteens had a health permit rate of 24.44%, a health certificate rate of 33.10%, 12 “three defenses” facilities (26.67%), and a kitchen area of more than 8m2 and refrigerated facilities (31.11 (46.67%) with special food utensils cleaning pool; 22 (48.89%) with independent preparation rooms; 27 (60.00%) with dedicated vegetables and meat washing pools; Of the 35 households (77.78%), 40 households (88.89%) of the tap water that meet the requirements. Conclusion Tongzhou District canteen health conditions are poor, there are potential safety problems.
