[目的]了解巍山县食(饮)具消毒质量,以便进一步加强对餐饮单位的卫生监督和管理。[方法]回顾总结2004~2008年辖区内饮食经营单位的食(饮)具用纸片法进行大肠菌群检测情况。[结果]5年中共检测6 573份样品,合格4 171份,总合格率为63.5%。不同年份间合格率的差异有统计学意义(P<0.01)。不同季度、不同规模餐饮单位间的差异均有统计学意义(P<0.01)。[结论]巍山县食(饮)具消毒合格率虽然逐年上升,但消毒质量整体水平仍较低。小摊点餐饮具消毒合格率仍然是工作难点,建议各类餐馆采用有效消毒方法,同时要加强卫生监督宣传和监测,投入必要的资金改善消毒工作环境和设施,消除食物中毒和食源性疾病隐患。
[Objective] To understand the quality of food (drink) disinfection in Weishan County in order to further strengthen the hygiene supervision and management of catering units. [Method] The review summarizes the detection of coliform bacteria by using the method of paper by drinking (drinking) of the catering business units in the area from 2004 to 2008. [Result] 6 573 samples were tested in the past 5 years, 4 171 were qualified, the total pass rate was 63.5%. The difference in pass rates between different years was statistically significant (P <0.01). Different quarters, different sizes of catering units were statistically significant differences (P <0.01). [Conclusion] Although the passing rate of food (drink) in Weishan County increased year by year, the overall disinfection quality was still low. Disinfection of tableware tableware passing rate is still difficult, it is recommended that all types of restaurants using effective disinfection methods, and to strengthen health monitoring publicity and monitoring, invest the necessary funds to improve the disinfection of the work environment and facilities to eliminate food poisoning and food-borne diseases.
