黄豆营养十分丰富,它兼粮、油二者之长,其蛋白质含量高达40%以上,是玉米、大米的4~5倍,且含有人体必需的8种氨基酸。据分析,一公斤黄豆相当于2.5公斤瘦肉、3公斤鸡蛋或12公斤牛奶的蛋白质含量。因此,它被人们誉为“植物肉”、“绿色牛奶”。黄豆脂肪含量高达20%,碳水化合物为25%。此外,还含有维生素A、B、D、E和钙、磷、铁等重要营养成分。
