目的了解蔬菜水果中的铝含量,为食品安全风险评估提供基础数据。方法采集在吉林省内种植的蔬菜和水果共计368份,采用微波消解-电感耦合等离子体质谱法(ICP-MS)进行测定。结果在0 ng/L~200 ng/L时线性关系良好,线性方程为y=8.07x+3.19×105,相关系数(r)为0.999 8。样品中铝的加标回收率为77.4%~100.3%,相对标准偏差(RSD)为2.70%~8.83%。368份样品中铝的检出范围为0.7 mg/kg~138.7 mg/kg,其中白菜、芹菜、菠菜、油菜、大葱、马铃薯、红薯、南瓜、苹果和桃的检出率最高,为100%,而梨中未检出。结论基本摸清吉林省蔬菜和水果中铝含量的本底水平,系统分析了蔬菜、水果中铝的本底含量,即蔬菜中铝的含量水平均高于水果中的铝,为进一步完善中国居民膳食铝暴露评估和含铝食品添加剂的安全管理提供科学基础。
Objective To understand the content of aluminum in fruits and vegetables and provide the basic data for food safety risk assessment. Methods A total of 368 vegetables and fruits grown in Jilin Province were collected and determined by microwave digestion-inductively coupled plasma mass spectrometry (ICP-MS). The results showed good linearity at 0 ng / L ~ 200 ng / L, the linear equation was y = 8.07x + 3.19 × 105, and the correlation coefficient (r) was 0.999 8. The background content of aluminum in vegetables and fruits is systematically analyzed. The content of aluminum in vegetables is higher than that in fruits.
